Did someone say bacon??

For today’s Recipe Wednesday I was inspired by events that transpired last night. What happened last night? Well Kteb and I had our annual company Christmas Holiday party. Yes, we all know that Christmas was almost a month ago, but in case you hadn’t heard we’ve been getting just a little bit of snow. Scratch that, we have a s@!* ton of snow, but I digress. Our poor party was snowed out a few weeks ago and was rescheduled for last night. Back to the recipe at hand.

As with any self-respecting holiday party we had a cocktail hour with passed h’ordeuvres. Here’s where the recipe comes in. Ready for it…I’m about to drop some bacon on you, yea you heard that right, BACON. If you ever have a party the best h’orduevres you can have on hand, Bacon Wrapped Scallops.

Bacon Wrapped Scallops

I searched high and low for a good recipe for this amazing little bite and courtesy of Tyler Florence, here is your recipe.

Ingredients

  • 1 1/2 pound large scallops
  • 1/2 pound thin-sliced bacon
  • Extra-virgin olive oil
  • Sea salt and freshly ground black pepper
  • 1 cup good quality mayonnaise
  • 1/4 cup hot chili paste (recommended: Sriracha Hot Chili Paste)
  • 1 lime, juiced
  • 2 tablespoons chopped cilantro, plus more for garnish
  • 2 heads Bibb lettuce, washed
  • 3 avocados, sliced

Directions

Heat the broiler. Wrap each scallop in a piece of bacon and secure it with a toothpick. Place the bacon wrapped scallops onto a baking sheet, drizzle them with olive oil, and season them with salt and pepper. Cook them under the broiler for about 10 to 15 minutes until the bacon is cooked through, turning once.

Make the spicy mayo by combining the mayonnaise, chili paste, lime juice, and chopped cilantro. Stir well and refrigerate until ready to use. To serve, carefully peel away the lettuce leaves and line a large platter with the lettuce cups. Top each with a bacon wrapped scallop, 2 slices of avocado, and a spoonful of spicy mayonnaise. Garnish with cilantro leaves. Devour.

    dude. we make this blog look grood (good + great = grood). i think i like the sound of the spicy mayo… not that bbq shiz they had last night. still yummy delicious. i mean it’s bacon… everything is better with bacon.
