A Happy Birthday blog for Kteb

28 Dec

So today X number of years ago the wonderful, talented, beautiful Kteb graced us with her presence. And I’m sure you will agree with me, we are all better off because of it.

So one of the things I have come to learn about Kteb is that she LOVES funfetti. So in her honor I did some research to find a different way to use funfetti. I found this awesome recipe from Pillsbury for funfetti cookies.

  • 1 (18.9-oz.) pkg. Pillsbury Funfetti Cake Mix
  • 1/3 cup oil
  • 2 eggs
  • 1/2 can Funfetti Vanilla Frosting

  • Heat oven to 375°F. In large bowl, combine cake mix, oil and eggs; stir with spoon until thoroughly moistened. Shape dough into 1-inch balls; place 2 inches apart on ungreased cookie sheets. With bottom of glass dipped in flour, flatten to 1/4-inch thickness.
  • Bake at 375°F. for 6 to 8 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets.
  • Spread frosting over warm cookies. Immediately sprinkle each with candy bits from frosting. Let frosting set before storing. Store in tightly covered container.

And voila!

Hopefully next year Kteb will actually be home so I can make these for her to enjoy. In case you’re wondering what I got Kteb for her birthday, I purchased this very nice necklace from the awesome jewelry co. Dogeared. If this doesn’t scream Kteb, I don’t know what does: http://www.dogeared.com/sterling-silver-happy-as-a-clam-necklace-with-clamshell-charm.
