Ewww Brussels Sprouts…on this Recipe Wednesday

For my whole life, I haven’t been afraid to try new foods, but brussels sprouts were just one of those scary foods that up until this year I had yet to try. All of the TV shows had warped my mind into thinking that brussels sprouts were these stinky, no flavor, green vegetables that I wanted nothing to do with.

That was all until I found this great recipe for Roasted Brussels Sprouts and Grapes from the November issue of Real Simple magazine. The Love Muffin and I decided to try it (he’s a huge advocate of brussels sprouts). It was super easy, you don’t need a ton of ingredients and you can make them really quickly. Here’s the recipe:

  • 1 package of fresh Brussels sprouts (about 1lb) trimmed and cut in half
  • 1/2 lb of red seedless grapes
  • 2 tablespoons of good olive oil
  • 2 cloves of garlic, sliced
  • Fresh Thyme leaves (about 1 tablespoon)
  • Salt and pepper to taste (of course!)

Here’s what you need to do! Heat your oven to 375°F. On a large baking sheet toss the Brussels sprouts and grapes with the olive oil, thyme, salt and pepper. Keep the sprouts cut side down so they can develop a nice brown crispness. Throw those bad boys in the oven for about 25 minutes. If your pan isn’t large enough to keep all of the sprouts on the cut side toss half way through to make sure they are browned evenly.

What you get is a delicious HEALTHY side dish for just about any meal. I’m making this for Thanksgiving dinner with my family and so excited to share it with them. Give it a try and let Kteb and me know what YOU think!
