recipe wednesday – cheese.eggs.bacon.

i like breakfast. it’s probably my favorite meal. i would rather go to brunch and eat eggs and home fries than go to dinner and have glazed salmon with a rice pilaf and veggies. so this brings me to my recipe for this wednesday, since that’s what we have dubbed wednesday’s now (thanks to cdog for the great idea). in my family we call it the cheesy egg bake. also in my family, we modify it a bit and add bacon because we all know anything is better with bacon. it is especially true for this dish. (i love bacon!)

sooo, i think you should call up your friends and your friend’s friends and make this dish for them. they will like you for it. then you’ll like me for suggesting this. then we are all one big happy family and that makes me happy. so really this is self-serving, just be aware, that this dish does not serve itself, so you will have to play that part of host somewhat.

Egg Cheese Bake    Serves 12-16

1 can mild green chopped chilies
6 eggs
1 qt milk (4cups)
1 ½ C Bisquick mix
1 lb. shredded mild cheddar cheese

Butter a 9×13” dish. Rinse chilies. Spread chilies on bottom of dish. Cover with shredded cheese. Beat eggs and and milk. Add a little at a time to the Bisquick until smooth. Then add remainder of mixture. Mixture will be thin. Pour over cheese ( add more shredded cheese on top). Bake uncovered 1 hour @ 350 degrees.
